More liquid is required, or one should cook the lentils and rice separately. The lentils get overcooked when cooked with the rice. The result was tasty, but I will cook the rice and lentils separately next time.

  1. Fry chopped onions in the olive oil until golden brown.
  2. Add lentils and rice with 2 cups water. Let cook for about 20 minutes until lentils and rice are tender.
  3. In a separate mixing bowl, chop and combine parsley, tomatoes, bell pepper, carrot and mint. When lentil and rice mixture has cooled mix in all ingredients. Toss with lemon juice and salt.
