  • Fry chopped onions in the olive oil until golden brown.
  • Add lentils and rice with 2 cups water. Let cook for about 20 minutes until lentils and rice are tender.
  • In a separate mixing bowl, chop and combine parsley, tomatoes, bell pepper, carrot and mint. When lentil and rice mixture has cooled mix in all ingredients. Toss with lemon juice and salt.

  1. More liquid is required, or one should cook the lentils and rice separately. The lentils get overcooked when cooked with the rice. The result was tasty, but I will cook the rice and lentils separately next time.
     
  2. This wasn't as good as I had hoped as the ingredients sounded promising. Possibly my fault as the recipe doesn't state which type of rice. I used arborio (which i know is one of the most absorbent) and had to use A LOT more liquid than the recipe stated. maybe works better with the 'quick cook' type rice...... i also didn't have the mint which probably makes a difference too. I am going to give it another go and experiment with a different type of rice as the texture was all wrong nd was probably down to me using the wrong ingredients. Made your Lentil Soup yesterday nd that was superb!!!! A full batch went at supper time and requests already received for another one. Thank you.
