I tried this since I found myself with leftover cooked lentils, and had no idea what to do with them! This was actually very tasty. Made a nice savory breakfast, along with some toast. The carrots added a nice crunch to balance the lentil "mush". If I ever have leftover lentils again, I'd be happy to go back to this recipe. Thanks!
