This has to be one of the cheapest dishes EVER. It is also quite healthy. It is very easy to put together. The taste was rather what I expected - lentils and rice, with some seasonings. I used brown rice, as suggested. If I make this again, I might consider putting some green peas in it to "liven it up" a little, although I'm not sure how they'd react to the long cooking time.
Made this for a veggie lunch and it hit the spot! Made 1/2 the recipe and added sharp cheddar cheese during the last couple minutes of cooking. The seasoning was perfect, not too salty. Will be making this again! Made for PRMR.
I really liked this. It's a healthy side dish that also tastes awesome. I added the cheese, but probably won't next time- it seemed unneeded. Thanks for sharing!
We enjoyed this one very much! I used a 9x13 pan, used brown rice, added some celery and used a whole Maui onion. It was our main meal and we had green salad along with it. The rest went into the freezer for quick dinners. Made for Cookbook Tag Game 2013.
WOW, this really is a super yummy casserole!!!! The lentils (I used brown ones) and brown rice go great together and make for such a yummy meal! I was amazed at how soft and creamy the brown rice got using this cooking method. It was like a risotto. Mmmm! I used veggie broth and a herbed low-fat cheese for the topping, but other wise stuck to your recipe and it was perfect! I will surely make it again and have already suggested it to a friend, who doesnt like how chewy brown rice normally stays. THANK YOU SO MUCH for sharing this wonderful recipe with us, bmcnichol!
