I just made this recipe for the 2nd time and I LOVE it! So much flavor, easy to make and freezes really well. Super healthy too! Thank you! I used whole wheat tortillas but the rest was the same.

Our first lentil experience. My husband is not too quick to try new things but loved the lentils. Initially I just told him it was a "new" bean burrito recipe. He thought they tasted "nutty" and liked the texture. I used all veggies from garden and instead of taco sauce used a cup of fresh homemade salsa that I made yesterday. I am sure in the winter, taco sauce will add a different twist and great flavor too. Cannot wait to try other lentil recipes too!

Outstanding! I made it almost like the recipe. I left out the cilantro, because I just don't like it, and I left out the cheese because I'm lactose intolerant... but I served the cheese separately for those who can eat it. We all loved it and ate it happily the next day. I'll definitely make it again!

Excellent recipe, very tasty, and you dont feel as if you are missing out on meat. A forgiving recipe as we have altered the vegie/lentil ratio depending on circumstance, and used cheddar cheese (I dont know what monterey jack is). I also used powdered taco/burrito sauce with some water instead of the premade stuff. Next time I think I'lkl try it as a pie. Yum!

Very simple recipe, and a lot of taste ! I usually hate lentils in a soup and I was looking for something different. Even my husband loved it !

Tasty and easy to make, I used a bit more vegetables than suggested and topped mine with FRESH salsa instead of sour cream, but otherwise pretty closely followed the recipe. It's delightful and I'll certainly make it again (especially for my vegetarian boyfriend).

Instead of making burritos, I made a pie. I layered the tortillas and mix in a pie plate and warmed the whole thing in the oven at 350 for 10 mins....very good!

Can't be beat. The entire family loved them. I actually thought they were better leftover for breakfast the next day (I doubled the recipe).

Very nice. The "4-6 servings" are more like 6 than 4, unless you have a bunch of exceptionally hungry people for dinner.

I was looking for a way to prepare some lentils and boy oh boy am I glad I tried this! The only change I made was to add some chopped spinach (the frozen kind - defrosted and drained) for some more nutrition and I subbed a squash for the zucchini. Instead of taco sauce I used salsa - boy was this a pretty dish with the red pepper, yellow squash, and green spinach! This will be added to my regular menu from now on! And, by the way, this is the first time I think I have reviewed a recipe that was never reviewed before! I'm glad I did!
