ingredients
- 2 tablespoons canola oil
- 1 onion, diced
- 2 cups green lentils, cooked
- 2 cups brown rice, cooked
- 2 cups plain yogurt
- 1⁄2 teaspoon oregano
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon cayenne pepper
- 1 cup cheddar cheese, grated
directions
- In a heavy skillet heat canola oil and gently saute the onions. Add all remaining ingredients except the cheese. Mix well and pour into the casserole dish. Sprinkle cheese on top and bake at 375 F for 30 minutes. Serve hot as a main dish.

I enjoyed making this dish it was easy and made an equally enjoyable meal! I changed it up to use what I had on hand. I will pair this with a glass of Torrontes from Argentina for a tang of the yogurt to meld with the sprite of the wine! I used a splash of the wine with melted butter to pour over the top of the casserole.
