  • Place all ingredients except salt into a large pot and bring to a simmer.
  • Cover and cook, stirring occasionally until lentils are tender, about one hour.
  • Add salt.

  1. 5 stars for how nutritious this recipe is but my soup turned out pretty bland, at least for our tastes. I felt it needed something acidic to perk it up so I tried lemon juice but couldn't quite get there and ended up using some balsamic glaze that I had on hand. I also had to add about 4 cups more liquid. I love how healthy this recipe is, thanks for sharing!

  3. I used turkey stock for this and it was great. I also cooked it in the microwave. Was a great starter dish for my dinner.

  5. Doubled recipe from start using turkey broth and also had to add additional liquid or it wouldn't have been a soup. With leftovers added 8 frozen whole tomatoes for new taste and to add more liquid. Definitely will make again - family of 5 loved it!

I live in Canada, and I work in the restaurant industry (not a chef!). Don't have a favorite cookbook, but I love these internet sites, (especially this one, where you can get the dietary info - that's cool). I'm pretty passionate about animals, and about my health, (regardless of what my beer and cigarette habit might say about me!). The majority of food I like to eat is vegetarian, if not, vegan. I am able to enjoy a good steak every now and again, however. As long as I don't have to cook it. (I hate cooking meat - makes such a mess...) I have recently had a month off - I took the time to backpack around Mexico by myself. Crazy? Nah. Well, maybe...
