  1. Place all ingredients except salt into a large pot and bring to a simmer.
  2. Cover and cook, stirring occasionally until lentils are tender, about one hour.
  3. Add salt.

Love lentils. This was a nice simple, basic recipe with balanced seasoning. Filling and healthy. I used chicken broth instead of vegetable (personal preference). Thanks.

I used turkey stock for this and it was great. I also cooked it in the microwave. Was a great starter dish for my dinner.

This turned out really well! It is very tasty. I skipped the red pepper flakes (because I didn't have any) and I traded mushrooms for carrots. I will make this again. Thanks!
