Banana cake appropriate for fasting
- 1 1⁄2 cups sugar
- 1 cup shortening
- 2 cups mashed bananas
- 2 tablespoons lemon juice
- 3 1⁄2 cups flour
- 2 teaspoons baking soda
- 1⁄2 teaspoon salt
- Cream sugar and shortening thoroughly.
- Add bananas and lemon juice, mixing well.
- Sift flour, baking soda and salt.
- Add dry ingredients to creamed mixture, stirring just until all flour is moistened.
- Spread in well greased 9 x 13 pan.
- Bake at 350F for 60 minutes.
