A delicious meal!
- 1⁄2 lemon, grated peel of
- 1 lemon, juice of (3tbls)
- 1 1⁄2 tablespoons vegetable oil
- 1 tablespoon honey
- 1⁄4 teaspoon ground ginger
- 1⁄4 teaspoon curry powder
- 1 cup shredded cooked light meat chicken
- 1 cup cooked orzo pasta (1/3 cup uncooked)
- 2 oranges, peeled,cut into bite-size pieces
- 2 medium bananas, peeled,sliced
- 1 apple, cut into bite-size pieces
- 1 cup green seedless grapes or 1 cup red seedless grapes, cut in half
- 1⁄2 cup sliced celery
- In large bowl, combine lemon peel and juice, oil, honey and spices.
- Stir in remaining ingredients; chill.
- Serve on salad greens and garnish with lemon wedges and fresh mint, if desired.
