This is a nice alternative to a rich dessert. I've served it with sugar cookies. Also would be great with pound cake or angel food cake.
- 6 ounces frozen lemonade concentrate, thawed
- 2 beaten eggs
- 1⁄3 cup sugar
- 1 (12 ounce) container Cool Whip
- In medium saucepan, combine lemonade, eggs, and sugar.
- Cook and stir over low heat until thickened.
- Allow to cool.
- Fold in Cool Whip.
