I've had this recipe for 10 years and it is a requested favorite at any party or potluck. It does have to be kept cold due to the egg content.
- 2 eggs
- 3 tablespoons sugar
- 1 (6 ounce) can frozen lemonade concentrate, thawed
- 1 cup heavy cream, whipped
- Beat egg until lemon colored.
- Stir in sugar and lemonade concentrate.
- Cook over low heat, stirring constantly, until thickened.
- Cool completely.
- Fold in whipped cream.
- Serve with fresh fruits.
