Lemonade Butter Cream Frosting

"I make this frosting to go with the Pink Lemonade Cake I also submitted. It is SO good. If you would like, you can also add a drop of red food coloring to add a pink hue to the frosting as well."

• Yields: 3-5 cups
• Serves: 10-12

ingredients

• 1 1⁄2 cups butter, softened (3 sticks)
• 6 tablespoons frozen lemonade concentrate, thats been thawed
• 1 teaspoon lemon zest
• 6 cups powdered sugar

directions

1. In a large bowl beat butter, lemonade concentrate and zest at medium speed with a mixer until combined. Gradually add powdered sugar beating until smooth. If you would like, add a drop of red food coloring to make the frosting pink as well.

Made this for a party last nite along with your pink lemonade cake recipe. Very good but very sweet!! Everyone really enjoyed it.

It was a good buttercream icing but not very lemony. I added a little lemon extract but it was still mostly just sweet. It makes a LOT of frosting, plenty for a 3 layer cake. It is very pretty. I added a few drops of red gel food coloring to tint it pink.
