This is a great breakfast treat. If you don't want maple syrup, try topping with with fresh berries and lemon yogurt. Yummmmmm!

  1. In a medium bowl, beat egg yolks with the sugar and salt.
  2. Blend in milk, lemon juice, lemon peel,and butter, beating well.
  3. Add the flour and baking powder.
  4. Beat egg whites until stiff and fold into batter.
  5. As usual, bake in a preheated waffle iron until golden brown and steam no longer escapes iron.
  6. Serve warm with maple syrup.

What a great recipe. I loved these subtle lemon flavored waffles. One batch made 12 large waffles. They were the perfect texture, crispy on the outside and light and tender on the inside. I served then with icing sugar, strawberries and a little whipped cream. Thanks so much for sharing.
