A nice, light salad dressing....easy to make, too.
- 1 cup extra virgin olive oil
- 2⁄3 cup lemon juice
- 2 tablespoons Dijon mustard
- 2 teaspoons sugar
- 1⁄2 finely chopped green onion
- 1 teaspoon salt
- 1 teaspoon pepper
- Combine all ingredients in a cruet and shake well.
- For best results, chill about 1-2 hours to combine flavors.
A very refreshing salad dressing. I cut the recipe in half and added shallots for the green onions (I was out of them) and added one small clove of garlic minced and a little more sugar for DH (he likes his dressings a little sweeter). Very delicious!!! Served with a mixed green salad and Crab a Licious Casserole#378260. I noticed I forgot to give this recipe the stars it deserves...sorry.

Simple, easy and delicious. All things I already had in my cupboard too. I missed the onions as well and used it on an apple, walnut, greens and blue cheese salad. Fabulous! Thank you.
