I cut this recipe in half & it made a tasty meal for 2 the of us! The cooking time for me was about 27 minutes, but it was well-worth the extra time! Directions

  1. Preheat oven to 200C (390F).
  2. Rub pork with salt and pepper, brush with oil, top with pancetta and thyme and secure with kitchen string.
  3. Add oil to a baking dish and toss tomatoes and garlic. Add the pork and roast in the oven for 20 minutes or until cooked through.
