This is from my Simple Foods for the Pack cookbook. This would be good tossed with tuna, peas and pasta.

  1. Combine all the ingredients in a blender.
  2. Blend until smooth.
  3. Carry in an airtight plastic bottle.
  4. Shake before using.

A pretty good rendition. I added a few dashes of Habenero sauce to spice it up and then it was perfect!

Fabulous dressing. Being a lemon lover, I found this to have the perfect amount of lemon in it. Since I found this recipe, I've made it several times. It is so good.

I agree, this is definitely a recipe that is a matter of taste. My hubby had wonderful memories of eating a similar dressing when he lived in California. I was pleased when I found this recipe. I tried it and found it was a bit too lemony, so I cut back by 1 tbsp. and it did help. I actually doubled this recipe because my hubby will take it work with him for his salads. All in all this is a nice dressing.
