- 368.54 g jar green olives
- 3 lemons (peel only)

Marinade
- 236.59 ml dry white wine
- 236.59 ml water
- 14.79 ml white vinegar
- 14.79 ml olive oil
- 1.23 ml thyme (crumbled into powder between fingers)
- 0.25 ml of powdered fennel
- 0.25 ml basil
directions
- Drain jar of martini olives (reserve juice for dirty martinis). Stuff tiny bits of lemon peel into the holes.
- Combine marinade ingredients. Let olives stand in the mixture 24 to 48 hours before serving.
