ingredients
- 1 cup flour
- 1⁄4 cup sugar
- 1⁄2 cup butter or 1/2 cup margarine
- 1 cup sugar
- 2 tablespoons flour
- 1⁄2 teaspoon baking powder
- 1⁄4 teaspoon salt
- 2 eggs, lightly beaten
- 3 tablespoons lemon juice
directions
- For base, combine flour, sugar, and butter.
- Mix well.
- Press into a greased and floured 8"X8" square pan.
- Bake at 325F.
- for 20 minutes or until golden.
- For the top, combine sugar, flour, baking powder, and salt.
- Stir in the eggs.
- Stir in the lemon juice.
- Mix well.
- Pour over the base.
- Bake at 325F.
- for 20-25 minutes, or until done.
- Cool in pan.

An excellent recipe for a great classic. I like that the base calls for regular sugar since I don't always have confectioner's sugar on hand. I used fresh squeezed lemon juice and added the zest of the lemon for an added kick as well. If possible, use real butter. It really adds to the overall flavor.
