  • Bring 8 cups water to a boil in a large saucepan.
  • Add pasta to pan; cook 5 minutes or until almost tender.
  • Add shrimp to pan; cook 3 minutes or until done.
  • Drain.
  • Rinse with cold water; drain well.
  • Combine pasta mixture, tomatoes, celery, avocado, poblano, cilantro, rind, juice, olive oil, and salt in a bowl and toss well.

  1. WOW!!!! I really enjoyed this salad. It was great. I had some leftover egg noodles from a noodle bake. I sauted some onion and garlic in a pan wth butter, then added my shrimp and cooked until pink. I removed from the heat and added my noodles to that. I then mixed the rest of the ingredients in a large bowl and added the shrimp and noodles to that and mixed well. I will be fixing this again. Thanks so much for sharing. Made for Photo Tag
