This is really good. I didn't have pine nuts so I used walnuts and it was awesome!! Beautiful dish too, very gourmet looking.

  1. Bring water to a boil.
  2. Add couscous, butter and salt.
  3. Remove from heat and let stand 5 minutes.
  4. In a shallow pan, heat oil.
  5. Add spinach, lemon juice, pine nuts, and orange peel.
  6. Cook until spinach wilts slightly and changes color (about 1 minute).
  7. Remove from heat.
  8. Mix spinach mixture with couscous.
  9. Add freshly ground black pepper to taste.
