  • In a small bowl, add cornstarch. Mix a little lemon juice with a little water and add to cornstarch. Beat to a smooth paste.
  • In a medium saucepan, heat remaining lemon juice and water. Add sugar, stirring constantly, until dissolved. Pour onto cornstarch paste, beating well until smooth.
  • Return to saucepan over low heat, stirring constantly, until thickened and clear. Using a zester, add the peel of 1 lemon.
  • Serve hot.
