Lemon Rice Pilaf

directions

  • Saute onion in oil in a large saucepan just until softened.
  • Add rice and continue sauteing until it starts to turn golden.
  • Stir in water, butter, salt, bay leaf, and cayenne.
  • Bring to a boil, cover, and reduce heat to low.
  • Cook until liquid is absorbed, 20 minutes.
  • Remove from heat.
  • Stir in lemon zest and juice.
  • Allow rice to steep a few minutes before serving.

  2. Mmmm...Delicious and fresh. The perfect amount of lemon flavor. I added a 1/4 t. of poultry seasoning and used a 1/2 t. less salt. I think next time I'll try cooking it in a skillet instead of a sauce pan, I think it would make it easier to stir in the lemon. Thanks for sharing the recipe.

  4. Can't say I really liked this recipe. The cayenne, the bay leaf, and the lemon all have very powerful flavors, and they didn't seem to blend very well.

  2. Hi there, Bev! This was wonderful and so flavorful! The lemon added such a fresh taste! The only thing different I did was use chicken broth instead of water. This was served as side and Recipe #41040 to go with Recipe #27488. What a great meal! I loved the little zip of the cayenne. It wasn't much, but just enough to make this dish different. Thank you for this great recipe! :) This went in my "On The Side, Please" cookbook.
