Mix together flour, pudding mix, sugar, baking powder and salt; set aside.

In another bowl mix together the milk, eggs, lemon peel and butter; stir in the extracts and mix well.

Fold in the poppy seeds.

Pour the batter into the prepared loaf pan and bake in the preheated oven for 60-70 minutes or until a toothpick inserted in the middle of the loaf comes out clean.

Allow loaf to cool in the pan on a wire rack for 10-15 minutes, then remove from pan and finish cooling on a wire rack.
Very tasty. I baked the loaf for 70 minutes and it came out perfect. It had a nice crust and soft interior, and wasn't too sweet. Great for dessert and breakfast. I liked it best served hot, spread with butter. I think it would also be great as muffins. Thanks for sharing.

I made this bread with sugar free lemon pudding and splenda for baking...it rose wonderful and the taste was great>>>>I am sure I will be making this one alot.
