This was super easy & delicious. I only had a lemon cake mix on hand, so I used that with 2 - 3.4 oz boxes of lemon pudding. The muffins turned out fantastic. Super moist & delicious. I am now trying a vanilla cake mix with vanilla pudding & chocolate chips.

  1. in large bowl, blend together cake mix, pudding, and poppy seeds.in seperate bowl, combine eggs, water and oil until well blended.
  2. blend dry ingredients into wet and gently stir.
  3. line muffin tins with papers.fill each cup 2/3 full.
  4. bake in 350* oven for 20 minutes --
  5. or toothpick test comes out clean when inserted near the center.
  6. cool 5 minutes before removing from tin.
  7. then place on wire racks to cool completely -- .
