Had this recently at a gathering of friends and I was surprised at how good it was.
- 3 ounces Bacardi Limon
- 3 ounces bacardi big apple liqueur
- 3 fresh pineapple chunks (1 inch)
- 6 ounces club soda (or Ginger Ale)
- 2 tablespoons sugar
- 12 mint sprigs
- 1⁄2 fresh lime
- In blender, mix the sugar, fresh pineapple, mint and lime.
- Slowly add Bacardi Limon and Big Apple.
- Top off with club soda and stir well.
- Serve over ice.
