A slightly wet rub for a roast, chicken, ribs, pork, etc. It would probably work well with a "meatier" fish like halibut. This recipe will cover a 4 to 6 lb. beef roast. Please note that you need the rind and juice from 1 lemon. Enjoy!

Ingredients Nutrition

  • 1 lemon, finely grated rind from the whole lemon plus 1 tbsp. fresh lemon juice
  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • salt and pepper


  1. Mix all ingredients well and rub into meat.
  2. Grill as usual!
