A healthy alternative to standard chicken and rice. SO YUMMY with moist chicken.
- 2 chicken breasts, thawed
- 1⁄4 cup wild rice
- 1⁄4 cup white rice
- 1 cup chicken stock
- 1 teaspoon lemon pepper seasoning
- Mix rice, stock and seasoning in small casserole dish.
- Lay chicken over top.
- Cover with foil.
- Bake in preheated 350F oven for 40 minutes or until chicken is cooked and rice is soft and liquid is gone.
