Lemon Pepper Chicken

"made this on my own because I was tired of buying lemon-pepper chicken that was neither lemony nor peppery enough for me. The result was a dinner flown blown with taste and bursting of flavor!"

  • Preheat the oven to 400.
  • Cover a glass baking dish with aluminum foil and place the chicken breasts on top.
  • Zest all 3 of the lemons into a small bowl, and then add the juice of 2 of the lemons.
  • add the pepper and all the other ingredients into the bowl.
  • Mix the combine and pour over all the chicken breasts.
  • Bake for 1 hour.
  • Remove from the oven and drizzle with the lemon juice of the last lemon, and a few more grinds from pepper mill.

  1. Was too pepper-y to eat. Next time I would half the pepper and double the honey. I scraped off the sauce and the chicken was still too spicy to eat (and I love spicy food).
     
  2. Easily a 5-star recipe. This created such a moist and tender chicken, and everyone in my family loved it. This recipe will be in regular rotation of the recipes that I prepare for my family. Very yummy and so, so easy to make. It was one of PAC Fall '08 recipes, and I think others will enjoy it too.

As a young girl I was always interested in cooking, at 8 I was baking home-made cakes and cookies for my family all from scratch. Growing up that passion was forgotten and it has only been rekindled in the past few years.
