Lemon Pepper Chicken

- 4 chicken breast halves, bone-in skin-on (using skin-on really adds a crunch)
- 3 lemons
- 1⁄4 cup black pepper
- 2 garlic cloves, minced
- 2 tablespoons honey
- 1 teaspoon salt
- 4 tablespoons olive oil
directions
- Preheat the oven to 400.
- Cover a glass baking dish with aluminum foil and place the chicken breasts on top.
- Zest all 3 of the lemons into a small bowl, and then add the juice of 2 of the lemons.
- add the pepper and all the other ingredients into the bowl.
- Mix the combine and pour over all the chicken breasts.
- Bake for 1 hour.
- Remove from the oven and drizzle with the lemon juice of the last lemon, and a few more grinds from pepper mill.

Easily a 5-star recipe. This created such a moist and tender chicken, and everyone in my family loved it. This recipe will be in regular rotation of the recipes that I prepare for my family. Very yummy and so, so easy to make. It was one of PAC Fall '08 recipes, and I think others will enjoy it too.

As a young girl I was always interested in cooking, at 8 I was baking home-made cakes and cookies for my family all from scratch. Growing up that passion was forgotten and it has only been rekindled in the past few years. Now I wake up and can't wait to find new recipes to cook for dinner, and I can't wait to have people over to dine with us.
