      This is a nice light refreshing salad. I'm not very found of raw zucchini so I used half zucchini and half cucumber, with good results. You could go completely with cucumber if you wanted.

      This was a super tasty salad to pack for my lunch. In order to round it out, I added some diced grilled chicken breast, and it made a satisfying and delicious meal!

      I tripled this recipe for our pool party guests, and let it sit in the fridge overnight. Very tasty and beautiful salad, paired perfectly with our Hawaiian Chicken Kabobs. Thanks for sharing this luscious salad.

      I can't understand why this only has 4 ratings, it is a great tasting salad, perfect for summer. I've made this 4 times already, the hubby requests it often. It also LOOKS great too. Perfect for a BBQ, stays well in the fridge for days. I take it camping too.

      What a great dinner combination my DD made for my other DD and I. We chose this recipe to make with Grilled Lime Shrimp. Both had citrus and complimented each other nicely. Loved the addition of the mint in this one! We all agreed this is 5 stars and we now have it in a safe place to have again!

      This is great. I had to use couscous as I didn't have orzo, but really liked the flavors. Mint added something special!

      A PERFECT summertime salad. I had a few of my vegetarian friends over for an early casual dinner and I served this as a side dish. I got rave reviews from them, one girl even requested the recipe AND all the leftovers. I had to go to three grocery stores to find the orzo, but I was probably just overlooking it, as even the third store only carried one container in the whole store. Definitely give this one a try. Thanks Miss Annie for a keeper!
