This is from 125 Meatless Main Dishes. I use martini olives and served this over a salad of mixed greens, tomatoes, cucumbers and feta. Has a nice bite. This will keep for a long time in the refrigerator, but you need to bring it to room temperature before serving.
- In a blender or food processor, puree the olives.
- Add olive oil and lemon juice and puree again. Toss 1 tablespoon per serving with salad ingredients.
