ingredients

• 3 tablespoons all-purpose flour
• 1⁄4 teaspoon baking powder
• 1 large egg
• 3 tablespoons sugar
• 2 tablespoons vegetable oil
• 1 teaspoon lemon zest
• 2 teaspoons lemon juice

directions

1. Mix the flour and baking powder.
2. Mix (in a separate bowl) the egg, sugar, oil, zest, and juice.
3. Combine the two mixtures.
4. Pour batter into a greased mug.
5. Microwave on high for 90 seconds. Cool in mug.
