- 1⁄4 cup lemon juice
- 3⁄4 cup canned low sodium chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 bay leaf
- 1 lb boneless skinless chicken breast
- Combine lemon juice, chicken broth, olive oil, oregano, and bay leaf in glass dish. Add chicken. Turn to coat with marinade. Marinate 2 hours.
- Broil or grill 4-5 inches from the heat 8-10 mins per side, turning three times or until thoroughly cooked.
