ingredients
- 473.18 ml white rice
- 946.36 ml boiling water
- 14.79 ml butter
- 14.79 ml chopped fresh herb (such as basil, rosemary, oregano, parsley, cilantro, chives, thyme)
- 7.39 ml grated lemon peel
- 7.39 ml lime zest
- 2.46 ml salt
- 2.46 ml lime juice
directions
- Cook rice for 5 minutes in a saucepan with briskly boiling water and butter, stirring once. Cover the pan, turn the heat off, but leave the pan on the burner undisturbed for 15-20 minutes.
- After the rice has absorbed the liquid and is light and fluffy, add the selected herb (or herbs), lemon peel, lime peel, salt, and lime juice. Stir well.
- Serve warm.

What a fantastic way to serve rice! I used chopped parsley for the herb. I cooked my rice in a rice cooker, then melted the butter in a saucepan, added the other ingredients, and stirred in the rice. This was delicious on its own and would complement and not overpower anything you served it with. Enjoyed ours with baked fish for a great meal - thanks for sharing the recipe!

I loved the flavors of this rice the lemon and lime were both distinct. I added a little extra butter and salt at the end. The only herb I added was fresh parsley so as not to conflict with Recipe #229978 , which I served it with. I was greatly disappointed in the cooking method, I followed it exactly and my rice was way too firm, so I added extra water and turned it on low, which of course gave me gummy rice. Next time I will use the standard method of cooking rice and add the extras when it's done. Thanks NW Gal , this ones a keeper. Made by one of the Cooks With Dirty Faces for ZWT 5

This site used to be awesome. It was at the top of its game when it was called Recipezaar, but that was many years ago. The site was purchased by Scripps and belly-flopped into mediocrity. A few of the faithful members remained, hoping to wait out the storm of corporate nonsense. But alas, it never got better and just continued on its terminal path to nothingness. So most of the loyal members have vanished and made homes at better recipe sites.
