Rice Krispies and pecans give these easy to make lemon cookies an extra crunch!
- 1 (18 ounce) package lemon supreme cake mix (any brand)
- 1 cup Rice Krispies
- 1 teaspoon grated lemon rind
- 1 tablespoon lemon juice
- 1⁄2 cup melted margarine
- 1 egg, slightly beaten
- 1⁄2 cup chopped pecans
- Melt margarine, and add egg . Mix well. Add all other ingrediants. Form into walnut sized balls. Do will be sticky. Place on cookie sheet sprayed with cooking spray. Bake at 350 degrees for 6-10 minutes, and remove to cooling rack.
- Note: Do not overbake cookies. You may want to gently squash cookies with a spoon when almost finished baking.
