This can be made without alcohol for a kid friendly version, just use 1 cup of lemon juice.
- 3 cups water
- 1 cup sugar
- 1⁄2 cup lemon juice
- 1⁄2 cup limoncello
- 1 tablespoon lemon zest, grated
- mint leaf
- Mix water and sugar in a 2 qt sauce pan and bring to boil over high heat. Boil uncovered, stirring occasionally for 5 minutes or until sugar is dissolved. Remove from eat, stir in lemon juice, limoncello and lemon zest.
- Pour into a 13 x 9 baking pan. Freeze one hour; stir. Cover - freeze two more hours or overnight until firm.
- Scrape and scoop into serving glasses and top with mint.
