Lemon-Ginger Chicken With Broccoli

  • Mix chicken with the next five ingredients, and allow to marinate for twenty to forty minutes.
  • Heat wok over high heat until a thin thread of smoke rises. Add 3 tablespoons peanut or canola oil (reserve last tablespoon until later) and allow to heat another thirty seconds. Add scallions, ginger, chilies and half of the lemon zest and stir fry for thirty to forty seconds, or until all is fragrant.
  • Add marinated chicken, and spread into a single layer on the bottom of the wok, and leave undisturbed for about one minute, or until the chicken browns on that side. Stir fry until the chicken is 2/3 done–in other words, 2/3 of the chicken is white or brown, and the rest is pink. Add half the lemon slices and stir fry for another thirty seconds, then remove chicken and lemon from wok to a clean bowl.
  • Add reserved tablespoon of oil to wok, and allow it to heat thirty seconds. Add broccoli and stir fry for thirty seconds, then add wine and lemon juice. Deglaze any browned bits sticking to wok, and add chicken back to wok. Add soy sauce and continue stir frying until chicken is completely cooked. Add other half of lemon zest and slices, and drizzle with sesame oil, and serve over steamed rice.

The prep took me a bit longer than indicated, but I needed things in place & ready so that all would go smoothly, which it did!   2. *Reviewed during ZWT4* I loved the ingredients and that this recipe was easily made gluten-free just by using suitable soy sauce. Luckily I prepared everything first as this recipe cooks up in a matter of minutes. I love chicken and broccoli. The lemon and ginger combination was nice also but the lemon was quite strong for my personal taste. Next time I think that I'll use the lemon juice but leave the sliced lemon and rind out.   3. Made this last night for dinner - the cooking part moves along quickly so be sure to prep everything ahead of time. I halved the recipe and it made enough for three of us. Everything went along pretty well, when I got to step 4 it says add wine and lemon juice, but I couldn't find where the lemon juice was mentioned again.... so, I just added a couple of dashes of RealLemon. This dish is very lemon-y, which I enjoyed - you could even eat the lemons that were added the first time around. The steps were a little overwhelming, I kept losing my place, might be nice if they were broken down into shorter steps. Made for Chinese New Year review game.

  5. This tastes from the name itself, lemony sweet, but just right. I didn't put in the chili peppers though since I didn't have it on hand so was thinking whether to sub it with bell peppers or dried pepper..but ahh, never mind..opted out on this.. and it took me some time to make it. The procedure 4. states adding juice but the Stir Fry recipe ingredients didn't have it in there, but nevertheless, I added it (1 tsp) aside from the lemon wedges and zest. Slicing the lemon zest took me some time, and figuring out how to cut a scallion on the bias err..had to look it up. It's my first time to make this dish..*blushes* But first time is the hardest so they say, so next time, it'll be alot easier. So why, is it still a 5? I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
