Lemon Garlic Marinated Chicken

"The acidity from the lemons in this dish makes a wonderful marinade and helps make the chicken beautifully tender. Serve with roasted cherry tomatoes on the vine. Time does not include marinating."

  • Season the chicken with salt and pepper.
  • Mix together the garlic, lemon zest and juice, chili, honey and ground coriander. Turn the chicken in the marinade to coat and leave to marinate in a covered non-metallic dish for 2-3 hours or overnight in the fridge.
  • Preheat the oven to 400°F Roast the chicken in the marinade for 35-40 minutes until the chicken is tender.
  • Place the chicken breasts onto warmed serving plates and garnish wih sprigs of cilantro.

  1. Oh. My. Goodness! When I saw this recipe, I thought that it sounded pretty good - what I didn't expect was how nice it turned out. The taste is very bright and the lemon is oh so amazing. The only red pepper I have growing is a Bishop's Cap, but otherwise I followed the recipe exactly. Thanks English Rose for an awesome recipe.
