Lemon Curd and Yoghurt Ice Cream.

An ice cream maker makes this smooth. Not too sure of how much it makes. The 1 litre is a guess. Nor does the time include the freezing or cooling down time.


  1. Put the eggs, butter, caster sugar and the lemon rind and juice in a pan.
  2. Cook gently over a low heat, stirring until the mixture coats the back of the spoon. Leave to cool until luke warm.
  3. Whisk in the yoghurt.
  4. Put into the ice cream maker and churn until set.
