I'm always looking for a good salad dressing recipe, and this is good! A great way to use that abundant harvest of cucumbers from the garden. Great over greens and tomatoes.
- 1 cup fresh lemon juice
- 3 large cucumbers, peeled and coarsely chopped
- 3 tablespoons honey
- 3⁄4 teaspoon dried dill
- 3⁄4 cup sunflower seeds
- 1⁄2 cup olive oil
- 4 1⁄2 teaspoons tamari
- 1⁄2 teaspoon garlic powder
- Blend in blender all ingredients, except sunflower seeds.
- While blending, add sunflower seeds.
This has a very nice flavor. The honey mixed with cucumber is really good. I let the mixture get very smooth and used the sunflower seeds as a topping. Nice crunch! We used it on a salad of spinach and tomatoes. Thanks Sharon!
Light and delicious! I cut this recipe down to a 1/2 cup yield and it worked marverlously. Since I have a dietary restriction regarding sunflower seeds(very high in potassium which is toxic to me in high amounts), I replaced them with 2 tbsp of chopped walnuts. It managed to give it that nutty quality and still held the integrity of the dressing. I highly recommend this dressing to anyone who's sick of the bottled junk! Thanks Sharon123
What an interesting and tasty dressing.The other reviewers' comments are useful (marinade is a great idea). I made 1/3 of a recipe, because that's all my mini food processor will hold. I added salt and more dill. I like it the way it is, but I still think one elusive ingredient is missing. It's on the tip of my tongue, but isn't. Wonder what it is.
