Lemon crumb cake

  1. Preheat oven to 350°F.
  2. Grease and flour 13"x9" pan.
  3. In a large mixing bowl, combine cake mix, eggs, water, and oil; beat at medium speed of electric mixer for 2 minutes.
  4. Pour into pan.
  5. In a small bowl, combine flour, sugar, and baking powder.
  6. Using two knives or a pastry cutter, cut in butter until crumbly.
  7. Sprinkle crumb evenly over batter.
  8. Bake until cake tester inserted in center comes out clean (35-40 minutes).
  9. Cool completely in pan.

This is quite nice and so simple. I added some lemon juice to the batter for some extra umph. Yummy!

What a great & easy-to-make cake, & great tasting, too! I'm always willing to add a bit of zest to whatever seems to 'call' for it, & did so in this recipe as well, including as I did, almost a tablespoon of finely chopped lemon zest! Thanks for posting such a great recipe!

Great taste and simple to do. I loved the crumb topping. I just mixed the butter in with my pastry cutter and had no trouble. Will make this one again.
