Lemon Cream Scones

  • Preheat oven to 205 degrees Celsius.
  • Sift flour, baking powder, baking soda, salt and sugar in a large bowl.
  • Cut in shortening, butter or margarine to the dry ingredients.
  • Beat the egg in a liquid measuring cup.
  • Add buttermilk until it reaches 175 mL measuring line.
  • Grate the rind of lemon(small grater), and juice it. Add it to the liquid ingredients.
  • Add the liquid ingredients gradually to dry ingredients, tossing with a fork for approximately 30 seconds each time, till a dough is formed(there will probably be leftover liquid).
  • knead 8-10 times.
  • Roll or pat into a circle 1.5 cm thick.
  • OPTIONS:.
  • Brush the top with milk and sprinkle with sugar.
  • Cut into 6 triangles.
  • Bake on a cookie sheet.
  • OR.
  • Use a round cookie cutter.
  • Bake on a cookie sheet.
