These are decadent and indulgent, and I decadently indulged in about a quarter of the pan! The coconut and lemon flavors mix very well together and are fun and bright for summer. I made these gluten free by using rice flour. I gave the rest as a gift to our vet for taking such great care of our puppy, and he said everyone in the office loved them! Thank you for posting! These were really good and really easy to whip up. Made as directed but halved the recipe and baked in an 8x8" pan. Thanks for sharing the recipe.

Wow, what flavor these little gems have, wasn't expecting that. I made half the recipe and baked in a 8 x 8 metal pan. I had trouble getting them out of the pan, they didn't look great but boy, do they taste fantastic. I cut them small because, they have a big, bold flavor, which we adore. I used three small meyer lemons. I really enjoy the combination of lemon and coconut. These squares were quick and easy to make. Thanks so much for sharing, made for ZWT7 for the Witchin Kitchen.
I halved this recipe and I also added some lemon zest to the lemon part. Crust was a little bit too dry, next time I might add more butter. Used a 8x8 pyrex dish, lined with non-stick foil. Really easy to put together.
Excellent! Made for the gluten-free ZWT#7 challenge. These can be made gluten-free by 1 1/2 cups gluten-free flour mix and adding 1/4 tsp xantham gum (if the flour mix doesn't already contain it). Follow the recipe as is.
