Killer cookie! I think I must have rolled my balls to big, because I only made about 2 dozen (rather than the 4 dozen) - but they are a delicious 2 dozen! I was concerned with the dough at first because it didn't seem to want to bind together - but once I started to make balls, the dough worked great. I followed the recipe as stated except I omitted the yellow food coloring in the frosting as I couldn't find it in my pantry (I know it is in there somewhere!). I will make these cookies again! Thanks for the recipe! Made for Photo Tag Game 1/9/09.

  1. Cream margarine and sugar until fluffy. Add egg, vanilla and lemon extract. Blend in coconut, flour and cream of tartar. Roll into small balls (1-inch) and place on an ungreased cookie sheet. Bake at 350F degrees for 8 to 10 minutes until lightly browned. Cool.
  2. For frosting: Blend all ingredients with wooden spoon or electric mixer and frost cookies.
