I love lemon and coconut, so these sound great to me. I have them on my list to try!

  1. Cream margarine and sugar until fluffy. Add egg, vanilla and lemon extract. Blend in coconut, flour and cream of tartar. Roll into small balls (1-inch) and place on an ungreased cookie sheet. Bake at 350F degrees for 8 to 10 minutes until lightly browned. Cool.
  2. For frosting: Blend all ingredients with wooden spoon or electric mixer and frost cookies.

Killer cookie! I think I must have rolled my balls to big, because I only made about 2 dozen (rather than the 4 dozen) - but they are a delicious 2 dozen! I was concerned with the dough at first because it didn't seem to want to bind together - but once I started to make balls, the dough worked great. I followed the recipe as stated except I omitted the yellow food coloring in the frosting as I couldn't find it in my pantry (I know it is in there somewhere!). I will make these cookies again! a great recipe! i couldn't really taste the coconut, so i added more in my second batch, but they came out great. The frosting was absolutely delicious, and I added some fresh lemon zest. I would recommend that you roll the balls a little bigger, or else the come out like tiny bites, but that is just my preference. Thanks for the recipe! It was great.

These are really good and easy to make. Rolled mine about the size of a jawbreaker and got about 4 1/2 dozen. I did dust with colored sugar though as these need a little more sweet to the cookie. Next time will add a scant more sugar to the dough, and a scant less lemon peel to the frosting as it's a bit tart for my taste. But, perfect bite size and should be a good alternative to all the Christmas candy. Will definitely make again.
