Super easy and delicious way to eat quinoa. You can even store it for up a week in the refrigerator to eat as a side or mixed with something else.
- Prepare quinoa according to package instructions.
- When cooked, stir in lemon juice and fresh cilantro.
We made this quinoa as a side to our spicy bean burritos. It was definitely very easy to make and required minimal prep. It was a little plain on its own, but the addition of feta helped and bumped my rating to 4 stars. Made for Fall PAC 2012.
