Lemon Chicken Spaghetti Toss

"I found this recipe in Quick Cooking a few years ago and it has become a staple in our household. It is a very tasty dish that is so easy to make, yet looks very impressive. Good enough for company!"

  • In a large skillet, saute onions& garlic in butter& oil until tender.
  • Stir in the chicken, lemon juice, parsley, seasoned salt& lemon-pepper.
  • Saute for 15-20 min or until chicken juices run clear.
  • Meanwhile, cook spaghetti according to package directions; drain.
  • Add to chicken mixture& toss.

  1. We loved this! A very simple and quick recipe that proved to be very good. I worried that it might be too "lemony" for the kids [5 and 2] but they loved it. The only change I made was adding freshly grated Parmesano Reggiano cheese when tossing together. Thanks for a great weeknight meal idea...and a cheap one at that!
     
  2. A great basic recipe to play with, and very easy (esp. if you dice lots of chicken on weekends and freeze in sealed bags, like I do). I too switched out the seasoning salt -- too "artificial" for an otherwise fresh and lively recipe. At the end, why note make a pan sauce by simply deglazing all those good bits with chicken broth! Also added steamed asparagus tips.

  4. I tried this recipe because I actually had all the ingredients! As I was waiting for my dinner guest, I noticed the sauce was getting thick, so I added dry white wine to create a reduction! OMG. Fabulous!!!!
     
  5. I made this a few days ago. I'm sure it would have been fine just the way it is written, but I added a few things. Since I didn't have any green onions, I used regular onions. I added fresh sliced mushrooms and some crushed red pepper flakes. Instead of mixing the spaghetti noodles and chicken mixture together, we just spooned the chicken on top of the spaghetti. My husband's least favorite meat is chicken and he loved it! In fact, he told me several times how much he liked it. I will definitely be making this again!

  1. Great lemon pepper chicken taste! Sometimes lemon pepper comes out weak in recipes, not this one --- it is not over powering though, its just right. I like that the recipe has simple ingredients and cooks up for a quick meal. When preparing I cut up my chicken first and added the lemon and spices (instead of fresh parsley I used dried parsley just half the amount; 1 and a half TBS), letting it sit/marinate while I chopped the green onions etc. You could change up this recipe by using shrimp, no meat at all, or as someone also mentioned sprinkling a little parmesan at the dining table. Thanks!
