- 2129.31 ml chicken stock
- 9.85 ml olive oil
- 315.37 ml carrots, chopped
- 315.37 ml onions, chopped
- 236.59 ml celery, chopped
- 1 garlic clove, minced
- 4.92 ml fresh thyme
- 9.85 ml salt
- 1 rotisserie-cooked chicken, shredded (about 3 cups)
- 226.79 g orzo pasta, uncooked
- 59.14 ml fresh flat-leaf parsley, chopped
- 12.32 ml lemon rind, grated
- 59.14 ml fresh lemon juice
- 2.46 ml black pepper, coarsely cracked (optional)
- 59.14 ml romano cheese, grated (optional)
directions
- 1. Heat olive oil in a large dutch oven.
- 2. Add carrot, onion, celery, garlic, thyme, lemon rind and salt. Saute over medium heat until vegetables begin to soften.
- 3. Add chicken stock and lemon juice. Bring to a boil.
- 4. Add chicken and orzo. Simmer until orzo is cooked thru.
- 5. Just before serving add parsley. Garnish with black pepper and Romano cheese.
