  • Combine lemon juice, brown sugar, olive oil, garlic, and oregano.
  • Mix well. Can be made earlier in the day and refrigerated, and re-mixed prior to adding to the chicken.
  • Pierce chicken beasts with a fork twice on each side.
  • Combine chicken and marinade and let sit at room temperature (or refrigerated) for 20 - 30 minutes.
  • Preheat BBQ or Oven to 400 degrees. Cook on BBQ 8 minutes each side, or in oven approximately the same on a broiler pan to allow any fat or marinade to escape (time for both BBQ and Oven can differ from these times (i.e. BBQ - outside temp can affect the internal heat of the BBQ. General rule is to cook until juices run clear.
  • ***This can also be made on an indoor grill if you have one. I've done that and it turned out great. You can probably broil it but I've never tried.

  1. Had 2 boneless chicked breasts for DH and me for dinner -- and WHAT to do that was different !! Found you recipe in time to defrost the chicken AND to marinate for 30 minutes, before baking in the oven, at 400 degrees, - which was done in 25 minutes. We love lemon flavors in many things -- always crisp and fresh. I just put the marinated breasts in a small casserole. It even made Stove-Top Stuffing taste like more than a Thursday night meal. Thanks for posting.
     
  2. This is a really outstanding recipe ~ outstanding for me because it was very simple to make, & yet it jazzed up the breasts nicely. I baked them--the breasts were large--in a 375 degree oven for a little more than 40 minutes! I'll certainly keep this recipe on hand! Many thanks!

  4. Made for I Recommend Tag. This is wonderful chicken and has a bright lemon flavor. My DD couldn't stop raving about it. We used six boneless skinless thighs (my favorite piece of chicken) instead of breasts. The only change that I would make to this recipe next time I make it would be to add a little bit of salt to the marinade. Thanks for posting this Chef at Heart!
     
  5. My BF and I liked the tanginess of the lemon with the sweetness of the brown sugar. I didn't have any chicken breasts so I used thighs and drumsticks... We like dark meat better anyway!!! The only other thing I did differently was add in about 1 TBS of lemon zest. Marinated for about 1hr and then grilled them on the BBQ... The skin crisped up so nice b/c of the sugar caramelizing... I spritzed it with a little more lemon juice right before serving... so yummy!!! Served it with some wild rice and a green salad for a quick and easy weeknight meal. Thanks for sharing!

Hi, I am currently taking my masters in social work, but cooking is my passion. I just would not be able to stand the hours working in a restaurant. I would never see my husband. So I am an amateur chef. I judge cooking contests like the Canadian national BBQ tournament etc. and love cooking for friends and family. I have a cookbook in process. Who knows if I will ever try to publish it but I will definitely give it as gifts to friends and family. My favourite parties to host are theme parties eg. I Okboberfest, Mexican and Thai etc. I generally do the research and each person can either choose from the recipes I have found or bring one of their own. I like to give the option since a lot of people don't necessarily have any recipes for that particular theme party. Anyway its fun. I nice break from University and a really good excuse to get together with friends and family. My other favourite things are gardening, knitting, sports and fitness. I also volunteer for a nursing home working with altzheimers and senile dementia patients, and for big sisters and I work part time for Planned Family Networks matching young adults with mental and / or physical challenges with a network of people they can count on when their parents can no longer take care of them. FYI This was the only day I've ever had straight hair. It was great while it lasted but I'm not spending an hour staightening it whan I can shower and do practically nothing by leaving it curly.
