I made these for my kids and boy were they a hit! quick and easy, I made them with store-bought cookies to speed things up. Next time (andwhen Mommy can eat them too) I will make fresh gingersnaps and make these again. DELISH!! Definite keeper. Made for ZWT6 - Germany/Benelux

This is a keeper! My family loved this combination! I made my own gingersnaps, so I could choose the size of the cookies. I also had some filling left over so I served it with pound cake and homemade raspberry jam. Thanks for the great recipe!!

These were very simple and very good. Just make them just before serving otherwise the the cookies get soft. Thanks for sharing.

This couldn't be anything but great. Made some ginger cookies and filled them with the lemon curd and cream cheese. Mmmmm. So good! I may never eat ginger cookies plain ever again. Thnx for posting, cookiedog. Made for ZWT4.

So simple and yet so verrrry YUMMY! Another ter-ruff-ic recipe from cookiedog. I made homemade lemon curd. I used regular store brand gingersnaps and had a lot of filling left after filling 32. I was worried that the filling wasn't sweet enough or that the cookies were too thick. No need to worry...after sitting in a ziploc bag overnight in the fridge the cookies became pleasantly soft and the filling flavored just right......I LOVED the flavor of the gingersnaps with the lemon cream cheese! WOW! I broke up the remaining cookies in my box and mixed them with the extra filling to make a trifle and it turned out delicious too! Thanks for this cute keeper recipe cookiedog!
