Lemon Cheesecake (Filling)

"This recipe is for just the filling of the classic lemon cheesecake"

ingredients

• 1⁄4 lemon
• 100 g Philadelphia Cream Cheese
• 1 tablespoon icing sugar

directions

1. Add the lemon juice and icing sugar to the cheese, whisk for around 2 minutes, being careful not to over whisk as this can cause the mixture to split.
2. Store in the fridge until ready to use/serve.
