Lemon-Capered Pork Tenderloin

  • Preheat oven to 350°F.
  • Trim fat from tenderloin, discard and set tenderloin aside.
  • Combine capers, rosemary and black pepper in a small bowl and then rub rosemary mixture over tenderloin and then place tenderloin in a shallow roasting pan and pour water and lemon juice over tenderloin.
  • Bake, uncovered, 1 hour or until thermometer inserted in thickest park of tnderloin registers 170°F.
  • Remove from oven; cover with aluminum foil and allow to stand for 10 minutes before serving.
  • Garnish as desired.

  1. Delicious and easy! I didn't have any capers, but otherwise followed the recipe as written with the exception being I added some veggies to the pan (potatoes (2), a few carrots and some caulflower (cut up)). Cooked for about 1 1/2 hours for a wonderful and easy dinner! Thanks for sharing!

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
